Mahdjouba, also spelled mhadjeb, is a crepe-like semolina based flatbread originating in Algeria, typically stuffed with a mixture of onion, garlic, tomato, peppers, and spices. Its name means covered or veiled in Algerian Darja, and the dish originates from the southern Algerian regions of Biskra and Touggourt, though it is popular throughout the country and counted among its essential street foods, related to the North African flatbread m'semen. Regional variations replace the vegetable filling with meat or chicken, or with cheese and vegetables.
