Merveilleux (dessert)

Breads, Flatbreads and Savory Pastries

Merveilleux is a small cake that originated in Belgium and has since spread to France and a handful of cities in the United States. It consists of two light meringues sandwiched together with whipped cream, then coated in more whipped cream and dusted with chocolate shavings, sometimes finished with a candied cherry on top. Its name means marvelous in French. Confectioners including the Belgian chocolatier Pierre Marcolini and the French pastry maker Frederic Vaucamps have created their own flavored variations, and a French regional variant called boule choco or arlequin replaces the whipped cream with chocolate buttercream and shapes the dessert into a ball coated in chocolate chips.
