Roat is a sweet confection from Hyderabad, India, associated with Hyderabadi cuisine, crunchy on the outside and chewy inside. It is made from semolina and refined flour combined with ghee, khoa, dried fruits, nuts, saffron and cardamom, kneaded into a paste and baked with steam until golden brown. It is traditionally served at room temperature and is closely tied to gatherings held during the month of Muharram.
