Suya is a traditional smoke-grilled spiced meat on a skewer, prepared originally by the Hausa people of northern Nigeria and now recognized as a national dish of Nigeria. Thin slices of meat, most often beef, though also lamb, goat, chicken or organ meat, are coated in vegetable oil and marinated in a spice blend called yaji, made from dry hot chili and cayenne pepper, ginger, dried onion, ground peanut cake known as kuli-kuli, salt and other spices, before being grilled over an open flame. After cooking, the meat is cut into bite-sized pieces and served with extra yaji, sliced onion and tomato, and accompaniments such as rice, plantain or Hausa masa; vendors known as mai suya sell it as street food, a restaurant appetizer and a common accompaniment to drinks at bars and night spots, and the dish has spread throughout West Africa and its diaspora.
