Galbi-jjim

Stews, Braises and Sauced Dishes

Galbi-jjim is a Korean braised short rib dish, a variety of jjim, or steamed and braised dishes. Beef or pork short ribs are cut, scored to let seasoning penetrate, and trimmed of excess fat, then simmered slowly in a seasoning mixture of soy sauce, sesame oil, scallions, minced garlic, pepper, ground sesame with salt, ginger juice and sugar, with jujubes, ginkgo nuts, carrots, pine nuts, chestnuts or mushrooms added near the end for garnish. The dish is traditionally served in a covered bowl called a hap rather than on a plate.
