Cocido, called cozido in Portuguese, is a traditional stew served as a main dish in Spain, Portugal, Brazil and other Spanish and Portuguese speaking countries. It combines meats such as pork, beef, chicken and mutton with cured meats known as embutidos, along with vegetables including cabbage, turnips, parsnips, potatoes, carrots and chickpeas, all cooked slowly over low heat. Its exact makeup varies by region, giving rise to named versions such as cocido madrileno, cocido montanes and the Portuguese cozido a portuguesa.
