Dobrada

Stews, Braises and Sauced Dishes

Dobrada, also called dobradinha, is a traditional Portuguese dish made from a cow's flat white stomach lining, commonly flavored with paprika, tomato paste, onion, garlic, clove and red pepper paste and usually garnished with parsley. Sliced carrots and butter beans are essential additions, and the dish is often served alongside white rice, especially in Porto, where it is known as tripas a moda do Porto. In Brazil the dish survives as a heritage of Portuguese culinary tradition.
