Labskaus is a culinary specialty of northern Germany, particularly the cities of Bremen, Hamburg and Lubeck, built around salted meat or corned beef, potatoes and onion, sometimes mixed with or accompanied by beetroot, pickled gherkin or herring. The dish is thought to have originated as a sailor's meal during the Age of Sail, when crews stretched their limited meat supplies with readily available ingredients that kept well at sea. It remains most commonly found today in restaurants along Germany's northern coast and in traditional Danish establishments.
