Mish-mash is a Bulgarian spring dish made from fresh vegetables, most often tomatoes, peppers and onions, cooked together with eggs and sirene, a brined Balkan cheese. The peppers and tomatoes are chopped and stewed in hot oil, with the peppers sometimes roasted and peeled first, and eggs and the cheese are stirred in near the end to thicken the mixture, which is finished with parsley before it comes off the heat; garlic, eggplant, okra, carrots and scallions are common further additions, and the dish can also be baked in an oven. It is traditionally served warm, either as an appetizer or a main course, with fresh bread.
