Pieds paquets, or pied et paquets, meaning feet packet or feet and packages in French, is a traditional dish from Marseille and Sisteron in the Provence region of southeastern France, made of sheep feet and stuffed sheep tripe stewed together. Sheep tripe is cleaned, cut into squares, stuffed with onions, parsley, garlic and salt pork, then rolled and wrapped into small pouches or packages. The feet are placed at the bottom of the pot with the stuffed packages on top, and the whole dish is stewed for several hours in a white wine and tomato sauce, along with garlic. A variant called tripo a la reboulado omits the tomato sauce and is instead served with a vinaigrette.
