Polbo a feira, literally fair-style octopus and known in Spanish as pulpo a la gallega, is a traditional Galician dish of boiled octopus. It originates from the Spanish provinces of Ourense and Lugo, both renowned for octopus preparation, and is the signature food of Lugo's patron saint festival for San Froilan. Specialized cooks, predominantly women called polbeiras, dedicate themselves to the preparation, and many polbeiras restaurants have opened across Galicia as rustic eateries since the decline of traditional rural fairs.
