Pom (dish)

Pom is a Surinamese oven-baked casserole made with the grated root of the arrowleaf elephant ear plant, locally called pomtajer, layered with sauteed chicken pieces between two layers of the raw, grated root mixed with citrus juice, along with a sauce of oil or margarine, onions, tomatoes, salt, pepper, and nutmeg, then baked until golden brown. It is considered the most popular and best-known festive dish among Surinamese communities both in Suriname and in the Netherlands, and its origin is often attributed to Creole or Jewish cooks, with Portuguese-Jewish plantation owners credited with adapting European potato dishes to pomtajer once potatoes proved difficult to grow locally.
