Rajas con crema

Rajas con crema, Spanish for strips with cream, is a Mexican vegetable dish of sliced poblano peppers in cream, especially popular in central and southern Mexico, where it appears alongside dishes such as tinga, mole, chicharron and papas con chorizo at taco gatherings called taquizas. The peppers are roasted using a technique called tatemado, then peeled, sliced and sauteed with onion before simmering in cream, sometimes with chicken broth, corn, garlic, cheese or shredded chicken added.
