Strapatsada

Strapatsada is a popular dish in many regions of Greece, especially the Ionian Islands, made from fresh tomatoes, eggs and olive oil, with feta cheese optional. Chopped or pureed tomatoes are cooked in olive oil with pepper until they thicken into a sauce, then beaten eggs are added and scrambled together, with feta cheese stirred in before serving and dried herbs such as oregano or thyme used to season. It is typically served hot or cold as a quick lunch or light snack, and is especially popular in summer when fresh tomatoes are abundant.
