Stuffed Squash

Stuffed squash, known by names including courgette, marrow, mahshi, kousa or zucchini depending on the region, is a dish common to Egypt, the Levant and the Balkans in which squash or zucchini is hollowed out and filled with rice, sometimes with meat, then cooked on the stovetop or in an oven. It belongs to the broader dolma family of stuffed vegetable dishes; the meat filled version is served hot as a main course, while the meatless version is treated as an olive oil dish and typically eaten at room temperature or warm, both usually seasoned with onion, spices and tomato sauce.
