Tuna pot

Stews, Braises and Sauced Dishes

Tuna pot, known in Spanish as marmitako, is a fish and potato stew from the Basque Country and Cantabria on Spain's northern coast, traditionally eaten by tuna fishermen aboard their boats and especially associated with the provinces of Bizkaia and Gipuzkoa. Onions, green peppers and garlic are sauteed, then potatoes broken into chunks are added along with tomato and dried choricero pepper pulp, which colors the broth red, and the mixture is simmered in water or fish stock until the potatoes soften and release their starch; in modern versions, raw albacore tuna chunks are added at the very end, off the heat, so the pot's residual warmth cooks the fish gently.
