Virado

Stews, Braises and Sauced Dishes

Virado is a Brazilian platter dish from Sao Paulo state, combining beans, pork, manioc flour, fried plantain, eggs, kale, rice and crisp pork rinds on a single plate. Its origins are traced to the colonial-era bandeirantes, Portuguese explorers and slave traders whose travel provisions would mix together during long journeys, an association reflected in the name of the dish. It remains widely eaten in Sao Paulo today, traditionally served on Mondays.
