Hilachas is a Guatemalan beef dish comparable to the shredded meat dish ropa vieja, made from boiled beef shredded into strands and cooked in a sauce of tomatoes and tomatillos together with potatoes, carrots and guajillo chiles. Its name means rags in Spanish, referring to the shredded texture of the meat, and the dish is eaten widely across Central America.
