Pipian is a sauce from Mexican cuisine made from pureed greens and thickened with ground pumpkin seeds. Its origins are said to reach back to the ancient Aztec, Purepecha, and Maya culinary traditions, making it one of the older sauce styles still used in Mexican cooking today.
