Hunkarbegendi

Hunkarbegendi, whose name means the sovereign is pleased, is a dish of Ottoman Turkish cuisine combining eggplant with lamb or beef. Eggplant is grilled until charred, then pureed and thickened with a bechamel sauce, and the puree is topped with sauteed or grilled cubes of meat. The charring gives the eggplant puree its characteristic smoky flavor.
