Karnıyarık, meaning riven belly, is a Turkish dish of eggplant stuffed with sauteed onions, garlic, black pepper, tomatoes, parsley, and ground meat, with green pepper sometimes added. The eggplant is traditionally fried before stuffing, though it may also be roasted, and the dish is often served with rice. It is closely related to imam bayildi, a similar but meatless eggplant dish served at room temperature.
