Saltah is a traditional Yemeni dish considered the national dish of Yemen, widely eaten in the northern parts of the country and mainly served for lunch. Its base is a brown meat stew called maraq topped with a dollop of fenugreek froth and sahawiq, a ground salsa of chillies, tomatoes, garlic, and herbs, with rice, potatoes, scrambled eggs, sambal, and vegetables as common additions, and it is traditionally eaten with khubz mulawah, a Yemeni flatbread used to scoop up the dish; in the Ottoman Empire it was also distributed as a charitable food made from leftovers donated by the wealthy or mosques.
