Fricot

Stews, Braises and Sauced Dishes

Fricot is an Acadian stew from the Maritime provinces of Canada that holds significant cultural importance among Acadians, whose French dinner call, au fricot, references the dish by name. It is a stew of meat, most often chicken but sometimes clams, rabbit, beef or pork, cooked together with potatoes, onions, dumplings and sometimes additional vegetables such as carrots.
