Zabaione

Zabaione, also spelled zabaglione, is an Italian dessert, and sometimes a drink, from the Piedmont region made with egg yolks, sugar, and a sweet wine, usually Moscato d'Asti, with some versions adding spirits such as cognac. The dessert version is a light custard whipped to incorporate air, and since the 1960s it has often been served in United States restaurants with berries or stone fruit in a champagne coupe, frequently prepared tableside. In France it is called sabayon, while in Argentina and Uruguay it is known as sambayon, also a popular ice cream flavor derived from the Piedmontese term sambajon.
