Riste

Riste, also spelled rista, is a Kashmiri dish of meatballs made from mutton, beef or, rarely, chicken, ground and mixed with spices and eggs before being rolled into balls by hand. The meatballs are first cooked in hot water for about thirty minutes and then boiled in a gravy. Like goshtaab, riste is an important part of wazwan, the traditional multi course Kashmiri feast.
