Chicken Yassa

Chicken yassa, also called yassa ganaar or poulet yassa, is a spicy Senegalese dish of marinated poultry, typically chicken, cooked with abundant onion and citrus or mustard, and is regarded as one of Senegal's most iconic dishes, particularly associated with the southern Casamance region. Chicken pieces are marinated for several hours or overnight in citrus juice, mustard, garlic, chili, black pepper and thinly sliced onion, then browned by grilling or frying before the marinated onion is caramelized separately and the browned chicken is returned to the pot with the remaining marinade to simmer until the sauce reaches the desired richness. It is served hot, traditionally with steamed white rice, and versions using fish or lamb in place of chicken are also made under the broader yassa name.
