Glycyrrhizin

Sweeteners

Glycyrrhizin is the chief sweet tasting constituent of the root of Glycyrrhiza glabra, liquorice. Structurally it is a saponin, and beyond its use as a sweetener it functions as an emulsifier and gel forming agent in foods and cosmetics.
