Barley Sugar

Barley sugar is a traditional hard candy, usually colored yellow or orange, made historically by boiling sugar together with barley water, a technique reflected in its name even though many modern versions substitute artificial flavoring for the actual barley ingredient. The candy is produced by heating sugar to around 160 degrees Celsius so that it melts and sets with a crystallized surface, or to a higher temperature of about 185 degrees Celsius to produce a clear, viscous candy when rapidly cooled. Older recipes for barley sugar sometimes included cream of tartar, corn syrup, lemon, egg white or saffron for additional flavor and color.
