Japchae is a savory, slightly sweet Korean dish of stir-fried glass noodles and vegetables, typically made with dangmyeon, a cellophane noodle made from sweet potato starch, mixed with assorted vegetables, meat and mushrooms and seasoned with soy sauce and sesame oil. Once a royal dish, it is now one of the most popular traditional Korean celebration foods, commonly served at weddings, at birthday celebrations such as a first birthday called dol or a sixtieth birthday called hwangap, and at other holidays, banquets, parties and potlucks, since it is easy to prepare in bulk and can be served warm, at room temperature or cold. It is usually eaten as a banchan, or side dish, though it may also be a main dish, and when served over rice it is known as japchae-bap.
