Glass noodles, also called cellophane noodles or bean thread noodles, are noodles made from starch rather than wheat flour, most traditionally mung bean starch, though sweet potato, tapioca and cassava starch versions are also common. They are dried into tightly wound bundles and turn translucent, glass-like and slippery once soaked and cooked, with a texture very different from wheat noodles. Naturally gluten-free, they are a staple across East and Southeast Asian cooking, prominent in Korean japchae, Chinese stir-fries, soups and hot pots, and Southeast Asian salads and spring rolls.
