Sautéed reindeer

Roasted, Grilled and Fried Dishes

Sautéed reindeer is a traditional dish from Sápmi, eaten in Finland, Sweden, Norway and Russia as well as the Sakha Republic, made from thinly sliced reindeer steak or back meat, often cut while still frozen, fried in fat and seasoned with black pepper and salt. Water, cream or beer is added during cooking until the meat becomes tender, and it is traditionally served with mashed potatoes and lingonberry preserves or raw lingonberries mixed with sugar; in Finland it is commonly accompanied by pickled cucumber. It is known locally as poronkäristys in Finnish, renskav in Swedish, finnbiff in Norwegian and báistebiđus in Northern Sami.
