Reindeer

Meat and Poultry Products

Reindeer is the meat of Rangifer tarandus, a deer species native to Arctic and subarctic regions of northern Europe, Asia and North America, herded by Sami, Nenets and other indigenous Arctic peoples as well as hunted in the wild. The meat is lean and dark red, with a flavor often compared to venison, and is a traditional staple of Scandinavian, Sami and Siberian cuisine, prepared as steaks and stews. Reindeer meat is also cured and smoked, and reindeer sausage is sold commercially in Scandinavia and parts of North America, where the closely related animal is more often called caribou.
