Boondi

Roasted, Grilled and Fried Dishes

Boondi is a dish of the Indian subcontinent made from gram flour, eaten as a dessert in its sweetened form or as a savory snack, and known regionally under names such as bundi, bundiya, buniya, bonde and nukti. To prepare the sweet version, chickpea flour is mixed with baking powder and food coloring into a batter, small drops of which are fried in a deep pan using a slotted spoon, then soaked in sugar syrup. It is popular across many regions of the Indian subcontinent, including Bangladesh, Sindh and numerous Indian states such as Rajasthan, Gujarat, Punjab, West Bengal and Tamil Nadu.
