Hujiao bing

Breads, Flatbreads and Savory Pastries

Hujiao bing, also called pepper bun or pepper cake, is a type of baked bun that originated in the city of Fuzhou, capital of the Fujian province of China, and has become a popular street food in Taiwan, where it is commonly sold at night markets and food stalls. The outer dough shell is made from flour, water, and a leavening agent, while the filling is a meat protein, usually pork or beef, marinated with sugar, soy sauce, white or black pepper, and scallion. Biting into the finished bun releases the meat juices, and the scallion sits at the center of the filling because of the particular way the dough is wrapped around it.
