Baking is a dry-heat cooking method in which food is cooked by surrounding it with hot air, traditionally in an oven but also historically in hot ashes or on heated stones. It is most closely associated with bread, and also produces cakes, pastries, cookies and other goods built from a batter or dough; because it relies on enclosed, indirect heat rather than direct flame or radiant heat, baking cooks food more slowly and evenly than grilling or roasting over an open source, and it underlies nearly all leavened and unleavened breads worldwide.
