Tebirkes

Tebirkes is a traditional sweet Danish viennoiserie made of two layers of yeast-leavened laminated dough with a marzipan filling, topped with poppy seeds. Despite its Danish identity today, the pastry's roots are Austrian, dating to the 18th and 19th centuries; Austrian bakers introduced it to Copenhagen in the late 1800s, after which Danish bakers adapted the recipe by adding the marzipan filling and poppy seed topping. Its name combines the Danish words for tea, te, and poppy seeds, birkes.
