Zhingyalov hats

Zhingyalov hats is a type of flatbread stuffed with finely diced herbs and green vegetables, a traditional dish of Armenians from the Artsakh and Syunik regions that has historically served as a staple food during times of scarcity such as famine and war. The unleavened dough is rolled paper thin, filled with a mixture of ten to twenty types of diced herbs and greens such as lettuce, spinach, atriplex, and beet greens, sometimes with cheese or fried onions added, then cooked briefly on a griddle called a saj or in a tandoor style oven called a tonir.
