A wheat berry is a whole wheat kernel made up of the bran, germ and endosperm with only the inedible husk removed, botanically a fruit type called a caryopsis. Wheat berries range from tan to reddish brown and vary in protein content by variety, with soft wheat carrying roughly six to nine percent protein and hard wheat ten to fourteen percent. They are cooked whole and added to salads or bread dough for a chewy texture, and are the raw kernel from which whole wheat flour is milled.
