Canning is a food preservation method in which food is processed with heat and sealed inside an airtight container, historically a glass jar and later a steel or tin can, so that no microorganisms can recontaminate it after sealing. The French confectioner and brewer Nicolas Appert developed the technique in 1809 after observing that food cooked and sealed inside a jar stayed unspoiled as long as its seal held; the method was later adapted to metal cans and became the basis of the modern canning industry.
