Charbroiler

Dry-Heat Cooking Methods

A charbroiler, also called a chargrill, char-broiler, or simply broiler, is a cooking device with a series of grates or ribs heated from below, used in both residential and commercial kitchens for a range of cooking tasks. In gas versions the heat source beneath the cooking surface is called an under-fired broiler, and most commercial units use long, evenly spaced metal ribs set over a combustion chamber with an array of burners, sometimes with a deflector or radiant briquettes between the burners and the cooking surface. Charbroilers are most associated with commercial kitchens, but they share the same basic construction and operation as residential grills, and the terms charbroiling and grilling are often used interchangeably.
