Co-fermentation is the winemaking practice of fermenting two or more fruits together at the same time, rather than fermenting each separately and blending the finished wines afterward. Although co-fermentation could in principle combine any grape varieties or fruits, it is used today mainly for red wines that combine several red grape varieties with a smaller portion of white grapes.
