Preparation and Flavor Development Techniques

Engastration stuffs the deboned carcass of one animal inside another, a technique said to have originated in the Middle Ages. Its best-known result is turducken, in which chicken meat is placed inside a duck carcass that is itself placed inside a turkey; some versions of the technique add further stuffing between each layer of meat.
