Souring

Food Preservation and Curing Techniques

Souring is a food preparation technique that causes a physical and chemical change in food by exposing it to acid. The acid can be added directly, as with vinegar, lemon juice or lime juice, or it can be produced within the food itself by a microbe such as Lactobacillus, as happens in the making of yogurt, cheese, ceviche and sourdough.
