Banana cream pie

Breads, Flatbreads and Savory Pastries

Banana cream pie is an American dessert pie made with sliced bananas, egg custard and whipped cream, built on a pre-baked pastry or graham cracker crust. The custard, or pastry cream, is made from milk, sugar, vanilla, eggs and butter, layered over the bananas and topped with whipped cream or creme fraiche. The dessert emerged in the late 19th century, not long after bananas became widely available in American markets in the 1880s: a 1901 recipe in the Woman's Exchange Cook Book layered sliced bananas in a baked crust under whipped cream, and by 1906 the Blue Ribbon Cook Book had refined the dish by adding a custard filling.
