Menudo

Soups and Broths

Menudo, also known as mondongo, pancita or mole de panza, is a traditional Mexican soup made with beef tripe in a broth built on a red chili pepper base. It is the Mexican variation of the Spanish dish callos, and similar tripe soups exist elsewhere in Latin America and Europe, including sopa de mondongo, guatitas and dobrada in Latin America, trippa alla romana in Italy and patsas in Greece.

FAQs

Is menudo really eaten as a hangover cure?

According to CooksInfo, "Some swear by it as a hangover cure, so it is often served on New Year’s Day mornings. Many restaurants serve it for breakfast on weekend mornings for people who drank too much the night before".
