Mulukhiyah

Soups and Broths

Mulukhiyah is a traditional Egyptian and Arab dish made from the leaves of a jute plant, Corchorus olitorius, also called jute mallow or Jew's mallow, prepared as either a vegetable dish or a soup or stew depending on the region. It originates in Ancient Egypt and is deeply embedded across the Middle East and North Africa, including the Levant, Sudan, Libya, Tunisia, Nigeria and Algeria, typically combined with beef or chicken stock, garlic, coriander and meat such as chicken or lamb. When boiled it produces a thick, mucilaginous broth similar in consistency to cooked okra, prepared Levantine style by sauteeing the chopped leaves in oil with aromatics or Egyptian style simmered into a soup, and it is typically served with white rice and lemon or lime.
