Ballokume

Breads, Flatbreads and Savory Pastries

Ballokume is an Albanian cookie that originated in the city of Elbasan and is now popular throughout Albania and in Albanian communities abroad. It is traditionally eaten on Dita e Verës, an Albanian pagan spring holiday celebrated on 14 March, and is made from butter, sugar, eggs and corn flour, sometimes with finj, ash from a wood stove boiled in water. The dough is traditionally kneaded vigorously in a copper bowl, a task often taken on by the men of the household.
