Magiritsa

Soups and Broths

Magiritsa is a traditional Greek soup made from lamb offal, prepared on Holy Saturday to accompany the lamb roasted for the next day Easter feast. It is eaten immediately after the midnight Divine Liturgy to break the fast of Great Lent, and again on Easter morning alongside salad, cheese, tsoureki sweet bread and red-dyed eggs. In Thessaly the dish is instead prepared as a fricassee of offal and vegetables, omitting the onions and rice used in the soup version.
