Borani

Salads

Borani is a salad dish of Iranian origin, also eaten in Turkish, Caucasian and Afghan cuisines, typically made by combining yogurt with vegetables. Common versions include borani-e esfanaj, a cold salad of spinach and yogurt, and borani-e khiar, made with cucumber and walnut, while an older Persian version, borani-ye bademjan, uses eggplant. Some regional preparations, particularly around Urfa, add lamb or vegetarian meatballs, and the dish is generally served cold.
