Lao Cuisine

Southeast Asian Cuisines

Lao cuisine, also called Laotian cuisine, is the national cuisine of Laos. The staple food of the Lao is sticky rice, and Laos has the highest sticky rice consumption per capita in the world, an average of 171 kilograms per person each year. Sticky rice is deeply ingrained in culture, religious tradition and national identity, and the Lao refer to themselves as children of sticky rice. The trio of national dishes is sticky rice, laab and green papaya salad, and laab, a spicy mixture of marinated meat or fish with herbs and greens, is the most famous dish. Fish sauce and chili peppers are common flavourings.
